Pulque: the living one
Pulque is fermented agave sap — thick, slightly sour, mildly alcoholic (4–6%), and alive. It can't be bottled for long, which is why you almost never find real pulque outside Mexico. It's served in pulquerías, often flavored (curados) with guava, celery, or pine nut. It predates the Spanish by centuries; the Aztecs restricted it to priests and elders.
Mezcal: the distilled one
Mezcal is pulque's distilled cousin — agave hearts roasted underground, crushed, fermented, and distilled. Every village does it differently, which is why two mezcals can taste like different planets. The smoke people talk about? That's the roasting pit, not a flavoring.
